Lentil crumble sourced from Inland Empire Foods
1. Preheat oven to 325°F.
2. Dice mushrooms to 1/4 inch dices.
3. Shred iceburg lettuce.
4. Slice red onion, tomatoes, and avocado.
Preparation
1. In a 2 inch full sized hotel pan, place dried lentil crumbles (2.85 pounds or 1 bag), hot water (2 quarts), and diced mushrooms (12 ounces). Mix well and level the mixture.
2. Cover with parchment and foil and bake in 325°F. oven for 12 minutes until all water is absorbed and fluff with a fork.
3. Brush ÂĽ teaspoon oil on each side of sub rolls.
4. Toast roll in 350°F. oven for 3-4 minutes until slightly toasted.
5. For service, top sandwiches in this order:
a. Spread #8 scoop (1/2 cup) lentil mushroom mixture on one side of sub roll.
b. 1/4 cup shredded iceberg lettuce.
c. 1/8 cup sliced red onion.
d. 2 slices tomato.
e. 1/4 cup avocado slices (2-3 slices).
